I made this a few day’s ago (minus the nuts) & my husband asked me if I went out at midnight to buy this from the grocery store. So I was forced to make it again, this time while he’s awake! LOL Enjoy!! I know that we will!!
Super Moist Banana Mac Nut Bread

1/2 C butter, at room temperature
1 C Sugar
3 Medium sized rip bananas - mashed
2 Eggs (Separated)
1/2 tsp. Vanilla
1/2 tsp. Lemon juice
1 tsp. Baking soda
1 1/2 C Flour
1 1/2 tbsp Hot water

Butter a 9x5x3 inch loaf pan.
Preheat your oven to 350 Degrees.
Cream butter & sugar in a large bowl. Add Bananas, egg yolks, vanilla, lemon juice & baking soda. Mix well. Stir in flour. Beat egg whites until they are stiff, then gently fold into your batter until it’s blended. Stir in hot water. Scrape batter into your pan. Bake for about 45 minutes or until a toothpick inserted into the center comes out clean.
Let cool on a wire rack for 10 minutes. Turn out on rack. Cool completely.
(Optional: Add 1/2 C of chopped nuts of your choice before scraping batter into the pan.)
